- Aspergillus oryzae extracts are sources of prolyl endopeptidases and dipeptidyl peptidase IV (DPP-IV) – a multifunctional serine protease suitable for proline-containing peptides, such as those found in gliadin and casein, both typically proteolytically resistant proteins.
